Ingredients

  • 1.5 lbs chicken breasts (or your choice of protein), cut into bite-sized cutlets
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves fresh garlic, finely minced
  • 1 tsp Italian seasoning (dried oregano, thyme, basil)
  • 1/2 tsp kosher salt & freshly cracked black pepper, to taste
  • 1/2 cup low-sodium chicken broth (or white cooking wine)
  • 1/2 cup heavy cream or coconut milk
  • 2 cups fresh baby spinach leaves
  • 1/3 cup grated Parmesan cheese
  • Fresh parsley & lemon wedges for serving

Method

  1. Prep & Season: Pat the protein completely dry with paper towels on both sides. Season generously with kosher salt, black pepper, and Italian herb seasoning.
  2. Sear until Golden: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once shimmering, add the meat in a single layer and sear for 4 to 5 minutes per side until beautifully golden-brown. Transfer to a warm plate.
  3. Build the Aromatic Sauce: Reduce heat to medium. Melt remaining butter in the skillet. Add minced garlic and sauté for 60 seconds until fragrant. Pour in chicken broth, scraping up any delicious browned bits from the bottom of the pan.
  4. Simmer & Finish: Stir in heavy cream and Parmesan cheese. Bring to a gentle simmer for 2 minutes until sauce lightly thickens. Toss in fresh spinach until wilted. Return the protein to the skillet, spooning sauce over top.
  5. Garnish & Serve: Remove from heat. Sprinkle with chopped fresh parsley, squeeze fresh lemon over top, and serve warm with your favorite sides!

Notes

• Chef's Secret Technique: Pat chicken cutlets completely dry with paper towels before seasoning! Removing surface moisture ensures that gorgeous crispy golden crust instead of steaming in the skillet.
